Pan Fried Scallops with Mango and Avocado Salsa with crisp speck

Ingredients


10 Sea Scallops

Olive Oil and Butter (Cooking)

½ Mango Cheek diced

½ Avocado diced

1 small shallot small diced

½ clove garlic

1 TSP of white Balsamic

2 TSP of olive oil

Chilli Flakes or fresh sliced (Optional)

6 Thin Slices of speck.

Salt and white pepper


Instructions


  1. Place strips of speck on a baking tray with baking paper and bake in hot oven for 10 minutes until they colour and go crisp. Set aside.

  2. Heat oil and butter in a non stick pan to medium high heat.

  3. Pat scallops dry on kitchen paper and season with salt and white pepper

  4. Pan fry Scallops for roughly 1 minute each side to a nice caramelised colour

  5. Mix salsa ingredients together and season to you liking.

  6. Place scallops around a plate and top with a teaspoon of the salsa and some nice crisp pieces of speck.
