Goldband Fillets with a Lemon and Basil Cream Sauce

Ingredients
2 GoldBand Filllets
¼ cup butter
2 TBS Olive Oil
1 cloves garlic minced
1/4 cup white wine
Juice of half a lemon
¼ cup pouring cream
¼ cup chopped basil
Salt and pepper
Instructions
Heat olive oil in non stick frying pan and lightly brown fish fillets but don’t cook through, then set aside.
In the same pan melt the butter and add garlic and salt and pepper to taste, lightly fry for 1 minute.
Add white wine and reduce by half.
Add cream and gently simmer for 3 or 4 minutes.
Stir through basil leaves and add fish back.
Cook for another 2 minutes or until fish is cooked through.
Serve with a nice crisp leafy salad.
