Stir Fry Method
(Serves two)
INGREDIENTS
500g Yunion Shanghai Egg Noodles
2 teaspoons sesame oil
2 teaspoons vegetable oil
3 chicken breast fillets, cut into strips.
5 cups chicken stock
2 tablespoons soy sauce
½ cup sliced Chinese mushrooms (pre-soaked 15 minutes in hot water)
1/3 cup chopped chives or spring onion
1 sliced fresh ginger root
Method:
Heat oil in a large sauce pan, add chicken and cook until brown, remove chicken from pan. Add stock, soy sauce and mushroom to pan and bring to boil , then simmer uncovered for 10 minutes. Add noodles and chicken, bring to boil, pour desired portion into bowl, garnish with chives. Serve immediately.
